Project Initiation and Concept Development

Approximately 12 months ago, we embarked on this project by brainstorming and documenting our initial ideas. The site, previously functioning as a fast-food restaurant, was re-envisioned to offer a unique dining experience within the airport.

From a catering and back-of-house (BOH) perspective, the primary challenge was to adapt to the existing canopy position and duct route in the kitchen. The new menu at Juniper is significantly more diverse and expansive than the original fast-food offerings. This necessitated innovative solutions to optimize storage, preparation, and cooking areas, ensuring we could meet the demands of the new menu.

Interior and Furniture Development

One of the standout features of Juniper is the island bar located at the centre of the seating area. Our team was responsible for its design and installation, along with the surrounding seating. We manufactured the necessary fabrications and installed all supporting equipment. Additionally, we collaborated closely with the designer to develop a comprehensive furniture package, which included everything from bar seating and lounge areas to formal dining tables and chairs.

Overcoming Airport-Specific Challenges

Working within airside locations at airports presents unique challenges. However, our collective team worked seamlessly to overcome these obstacles and deliver the completed project within the 12-week timeframe.
